Egg Bruschetta & Pizza on a bread

There are two foods that I personally love and they are my go to foods when the fridge is empty or I am just too lazy to cook anything that requires more than ten to fifteen minutes worth of effort.  No points for guessing, the title spilled the beans.  Yes! they are eggs and bread.

Here are two quick fix hors d’oeuvres that you can dix for a quick snack after a long, tiring day or spice them up with some herbs, choice cheese and impress your guests.

~The first one is a simple egg and cilantro bruschetta. 


The idea to make these was inspired by tomato, oregano/basil bruschetta that I often make when hosting a dinner. This modified bruschetta, though, was made as an evening snack for the mister and me.


Here’s what you’ll need:

Bread; baguette or ciabatta. I used baguette.

2-3 eggs.

2-3 twigs of cilantro/coriander.

Cooking spray/canola/olive oil; 1 tbsp.

Salt and Pepper to taste.

Garlic cloves, 2, optional.

Red chilli flakes, optional.

Shredded Mozzarella, optional.


First wash and chop the cilantro, as always I would recommend keeping the stems. Next, break eggs in a bowl, add salt, pepper and chopped cilantro and beat until light and fluffy. In a skillet heat oil. If you are using garlic, throw it in and let it warm up with the oil. Then add the egg mixture and stir with a wooden spoon until it coagulates. The idea is to make scrambled egg. I use an oven toaster grill. If you have one, turn it on to the toast setting.

Slice the baguette into one inch thick pieces. Top these with egg and cheese (if you please 🙂 ). Stick them in the oven for just over a minute or until the cheese melts and serve. The egg bruschetta is best eaten warm.

~The next recipe for today is another bread and egg snack, a veritable pizza on a bread slice.

Here’s what you’ll need for this quick fix:

Whole wheat bread slices.

Turkey pepperoni or regular pepperoni.

Shredded mozzarella cheese.

Eggs, 2-3.

Salt and pepper to taste.

Canola/olive oil/butter.

Garlic cloves, 2-3, optional.

Red chilly flakes, optional.

Pasta/pizza sauce, optional. (This would make the base even more pizza like.)


In preparation, break eggs in a bowl and beat them with salt and pepper. In a skillet heat oil and cook the egg mixture to make scrambled egg, just as above. On slices of bread spread some melted butter, then add a layer of egg, with a light sprinkle of cheese.

*Note: There is one more way to go about this, you can start first with some pasta/pizza sauce and then pile up the rest of the toppings. This way you literally have a pizza on a bread slice.



After this add a layer of pepperoni, followed by another sprinkle of cheese. Put this compilation in the toaster oven or you can use a griddle/tawa, warm it on the stove and place the slices on it. Cook them covered for a few minutes, this will allow the cheese to melt. Remove the lid and let the moisture evaporate so that the bread can become crispy and crusty instead of being damp. But for the toaster oven a simple indication is the melted cheese.

That’s it, remove and serve warm. If you want to make it fancier, cut each slice into one inch squares and garnish with a sprinkle of dry herbs and a topping of black olives.
